Calcium: Role in the Body, Sources & Which Microgreens Have It
Somewhere in most Indian childhoods is a glass of Complan or Horlicks, forced down with the promise that it was “for strong bones.” Fair enough, but calcium's actual job in the body is a lot bigger than bone strength, and several AgriZen microgreens, Amaranth and Basil especially, carry a real, measured amount of it.
Calcium is also a nutrient where a single, real, peer-reviewed study measured four of our five linked varieties side by side, under identical growing conditions, a genuinely clean comparison by the standards of this kind of research.
What It Is
Calcium is a mineral, not a vitamin, and it's the most abundant mineral in the human body by weight, though roughly 99% of it is locked into the crystalline structure of bone and teeth as hydroxyapatite, a calcium-phosphate mineral complex. The remaining 1%, circulating in blood and inside cells, does most of the biochemical work described below.
Role in the Body
Hydroxyapatite: calcium as a structural building block
Bone tissue is a composite material: a flexible collagen protein scaffold reinforced with hydroxyapatite crystals, which is what gives bone both some flexibility and considerable rigidity. Bone is not inert. Osteoclast cells continuously dissolve small amounts of this mineral matrix while osteoblast cells rebuild it, a cycle called bone remodelling that depends on a steady calcium supply to keep pace.
The calcium signal: troponin and muscle contraction
Inside muscle cells, a contraction is triggered when calcium ions flood out of internal storage (the sarcoplasmic reticulum) and bind to a protein called troponin C. This binding event physically shifts a second protein, tropomyosin, out of the way, exposing the sites on actin filaments where myosin can attach and pull, generating the mechanical force of contraction. That calcium-troponin-tropomyosin sequence is the direct mechanistic basis for muscle contraction generally, cardiac muscle included, which is why calcium comes up in discussions of heart rhythm as well as skeletal muscle.
Calmodulin and nerve signal transmission
In nerve cells, an incoming electrical signal opens voltage-gated calcium channels at the nerve terminal, and the resulting local calcium influx triggers neurotransmitter-filled vesicles to fuse with the cell membrane and release their contents into the synapse. Calcium also acts as a signal in its own right inside many cell types by binding a separate protein, calmodulin, which changes shape upon binding and goes on to activate a wide range of downstream enzymes. The body regulates blood calcium levels within a narrow range primarily via parathyroid hormone, which can pull calcium out of bone stores if dietary intake falls short, a mechanism directly linked to reduced bone density over time when this borrowing happens chronically.
Food Sources (General)
Dairy products are the most concentrated and commonly consumed source. Among plant foods, sesame seeds, ragi (finger millet), tofu set with calcium sulphate, and dark leafy greens are meaningful sources, though absorption from some leafy greens is reduced by their oxalate content, since oxalate binds calcium into an insoluble, unabsorbable complex in the gut.
Which Microgreens Have It
Kale, Broccoli, Amaranth, and Basil were all measured in the same study, using the same growing system and analytical method, which makes this table more directly comparable than most of our other Nutrient Deep-Dive posts. Amaranth and Basil are essentially tied for the highest calcium of the four, both comfortably ahead of Kale and Broccoli in the same study. Bok Choy is the odd one out. A different, real study measured it, but on a dry-weight basis and without an isolated fresh-weight figure we could confidently convert, so it stays qualitative rather than force a number.

Frequently Asked Questions
Why does this post trust one single study's numbers so confidently?
Because comparing four varieties grown under identical conditions and measured with the same method removes a huge source of error that plagues a lot of nutrition research: differences in growing conditions or lab technique masquerading as differences between plants. A single well-designed comparison like this one is often more trustworthy than several disconnected studies, not less.
Can microgreens replace dairy as a calcium source?
No. Even the highest-calcium microgreens in this table contribute a small fraction of daily calcium need at typical serving sizes. They're a reasonable supplementary source as part of a varied diet, not a dairy replacement.
Does the oxalate content in some greens reduce calcium absorption?
Oxalates bind calcium into an insoluble complex the gut can't absorb, spinach being one commonly cited dietary example. This hasn't been specifically measured for the microgreens in this post, so it's noted here as a general chemical principle rather than a specific claim about any variety in this table.
