Vitamin K: Role in the Body, Sources & Which Microgreens Have It
If you or someone in your family takes a blood thinner, you've probably seen the advice: keep your intake of green vegetables fairly consistent. What's actually in spinach that a prescribing doctor cares about so specifically is a more interesting question than it first sounds.
Vitamin K rarely gets discussed the way vitamin C or vitamin A do, partly because deficiency is genuinely rare in adults eating any reasonable amount of green vegetables, AgriZen's Spinach, Kale, and Coriander microgreens among them. What It Is
Vitamin K is a fat-soluble vitamin with two main dietary forms: K1 (phylloquinone), found in green plants and the form covered in this post, and K2 (menaquinone), found mainly in fermented foods and animal products. Plant sources, including all the microgreens below, provide K1 specifically.
Role in the Body
The carboxylation reaction that activates clotting factors
Vitamin K's defined biochemical job is to serve as a cofactor for a single enzyme: gamma-glutamyl carboxylase (GGCX). GGCX converts specific glutamate (Glu) residues on certain proteins into gamma-carboxyglutamate (Gla) residues, a modification that gives those residues the ability to bind calcium ions. Several clotting factors, including prothrombin and Factors VII, IX, and X, require this Gla modification before they can bind calcium and attach to phospholipid membrane surfaces, the physical step that allows the blood clotting cascade to assemble and activate. Without carboxylation, these clotting factors are produced but remain functionally inert (Nature Communications, GGCX structural biology).
The vitamin K cycle, and exactly where warfarin intervenes
Each carboxylation reaction consumes a molecule of reduced vitamin K (vitamin K hydroquinone), oxidising it to vitamin K epoxide in the process. To keep the system running on a very small dietary supply, the body recycles that spent epoxide back to the active hydroquinone form using the enzyme vitamin K epoxide reductase (VKORC1), completing what's called the vitamin K cycle. Warfarin works by directly inhibiting VKORC1, blocking the recycling step and starving GGCX of its cofactor, which is precisely why a patient's vitamin K intake needs to stay consistent. It isn't a vague interaction; it's two enzymes in the same short metabolic loop, one of which the drug specifically targets.
Bone matrix proteins
The same GGCX carboxylation reaction also activates osteocalcin, a protein produced by bone-forming cells that, once carboxylated, binds calcium and hydroxyapatite crystals within the bone matrix. A second Gla protein, matrix Gla protein, is carboxylated in blood vessel walls and cartilage, where it appears to inhibit inappropriate calcium deposition in soft tissue. Vitamin K's role here is mechanistically the same carboxylation chemistry as its clotting role, just acting on different substrate proteins in different tissues.
If you or someone you're cooking for takes warfarin or a similar vitamin K antagonist, consistency matters more than avoidance. Because these medications work by blocking VKORC1 directly, a sudden increase or decrease in vitamin K intake from any green vegetable or microgreen changes how much substrate is available to compete with the drug, which can shift how well the medication is dosed. This isn't a reason to avoid AgriZen's Spinach, Bok Choy, or Broccoli microgreens; it's a reason to eat vitamin K-rich foods at a fairly steady, predictable level and to mention any real dietary change to the prescribing doctor. Food Sources (General)
Dark leafy greens are by far the best sources of vitamin K1: kale, spinach, broccoli, and Brussels sprouts at maturity all rank among the highest. Vegetable oils contribute smaller amounts. Root vegetables and most fruits contain very little.
Which Microgreens Have It
Coriander has the cleanest figure, measured directly in exactly this variety. Kale and Broccoli both come from a real 2026 study, though broccoli's data point is technically broccoli raab (rapini), a related but genuinely different crop (Brassica rapa vs. Brassica oleracea) despite the similar name. Spinach is the most interesting entry: the only measured figure found is unusually low, from a red-leaf cultivar the original researchers themselves flagged as a surprising outlier given mature green spinach's well-documented vitamin K density. The real number is reported here while being clear it likely understates spinach as a category. Bok Choy's figure is compiled from a literature review rather than one controlled study.

Why did spinach test low for vitamin K when mature spinach is well known for having plenty of it?
The specific cultivar measured was a red-leaf variety, not standard green spinach, and the researchers themselves noted the result was lower than expected. Cultivar, growing conditions, and harvest timing all affect phytonutrient levels significantly at the microgreen stage.
