Basil Microgreens: Taste, Nutrition & How to Use Them

Basil blackens and bruises faster than almost any other herb AgriZen grows, and that's not a sign anything's gone wrong. It's the same phenolic compounds this post is about to cover doing exactly what they do when a plant's cells are damaged. An enzyme called polyphenol oxidase reacts with those phenolics and oxygen the moment a leaf is cut, bruised or chilled, producing the dark pigments you see. This is a well-documented mechanism common to many fruits and vegetables (full review here), and basil simply carries an unusually active version of the enzyme, more so than most herbs, which is why a torn basil leaf can visibly darken within minutes while a torn lettuce leaf barely changes.

What Is a Basil Microgreen?

Basil microgreens come from Ocimum basilicum, the same plant behind classic Genovese basil. The leaves are small, tender and aromatic, with a sweet, faintly peppery flavour, milder than mature basil but recognisably the same herb.

Basil is also more cold-sensitive than most microgreens AgriZen grows. Refrigeration slows spoilage generally, but for basil specifically it can actually accelerate the blackening described above, since basil is a warm-climate plant prone to chilling injury at fridge temperatures. Grown to microgreen size, it's typically ready in ten to fourteen days.

 

Nutrient Profile

A 2020 peer-reviewed study, published in the Journal of Food Composition and Analysis, ranked ten culinary microgreens on a composite Nutrient Quality Score covering protein, fibre, vitamins and minerals. French basil came out second of the ten overall, behind only radish and ahead of roselle (full study here), a specific, comparative result rather than a general "microgreens are great" claim.

A 2023 multi-species study from Penn State, published in Frontiers in Plant Science, measured mineral content across seventeen microgreen species and found Genovese basil among the varieties identified as a good source of calcium (full study here). Across the seventeen species tested, iron was the most abundant micromineral overall, followed by zinc, manganese, boron and copper.

One of the more distinctive things about basil's nutritional profile is that it doesn't stop at vitamins and minerals. Basil's characteristic aroma comes from volatile organic compounds, primarily linalool and eugenol, and peer-reviewed research has confirmed these compounds are present and concentrated specifically at the microgreen stage. A 2022 study in Horticulturae found volatile organic compound emission is highest at the microgreen stage and declines significantly over the following weeks as the plant matures (full study here). In quantitative terms, linalool and eugenol have been measured in basil leaf tissue at approximately 1.01 g/kg and 2.80 g/kg dry weight respectively (Marzocchi et al., Foods, 2022, full study here). The early growth stage isn't where basil's aroma is weaker - it's where it's most concentrated.

On vitamin K specifically: mature fresh basil is one of the richest food sources of phylloquinone documented by USDA, at over 400 µg per 100g fresh weight. A microgreen-stage measurement for basil hasn't been published in a peer-reviewed study, so we're not quoting a microgreen-specific figure, but the general pattern across green microgreens is that vitamin K is present and meaningful at this early growth stage.

Basil is also a source of calcium and, fittingly given the intro above, the same class of phenolic compounds responsible for its rapid browning also register nutritionally as polyphenols and antioxidants.
