Pink Radish Microgreens: Taste, Nutrition & How to Use Them

Anyone who's bought radish from the same market across different seasons has probably noticed it doesn't always taste the same, sometimes sharp and biting, sometimes mild and almost sweet. That's not inconsistent farming, it's real, documented plant chemistry. Peer-reviewed research on field-grown radish has found glucosinolate content, the compound family responsible for radish's pungent bite, shifts meaningfully with growing temperature, light intensity and even irrigation timing across a season (full study here). Growing indoors under controlled LED light, at a steady temperature, is part of why Pink Radish microgreens taste roughly the same in a delivery in any given month, rather than swinging with the weather the way a field-grown radish root would.

What Is a Pink Radish Microgreen?

Pink Radish comes from Raphanus sativus, the same species as every other radish AgriZen grows. Its stems carry a soft, gentle pink blush, a lighter, more subdued colouring than Sango's dramatic lavender-purple or China Rose's deep rose-magenta. The flavour is crisp and peppery, sitting comfortably in the middle of AgriZen's radish lineup.

Worth being upfront about: unlike Sango or China Rose, which are specific, documented cultivars with their own breeding history, "Pink Radish" is more of a trade descriptor than a single fixed variety, used across the microgreen seed industry for radish types with green leaves and pink stems. The closest genuinely named heirloom in this colour range is "Pink Beauty," though AgriZen's Pink Radish isn't tied to one specific named lineage the way Sango and China Rose are. We think that's worth saying plainly rather than inventing a more storied origin than the variety actually has.

Grown to microgreen size, Pink Radish is typically ready in eight to ten days, similar to AgriZen's other radish varieties.


Nutrient Profile

A 2019 peer-reviewed comparative study of four Brassica microgreens, which we've referenced for Mustard, Broccoli and Kale, included radish generally in its testing and found vitamin C in the range of 31 to 56 mg per 100 g fresh weight across the group (full study here). That study didn't distinguish between radish cultivars by colour, so we're citing it as general Brassica microgreen context.

A separate peer-reviewed study comparing radish sprouts to mature taproots across eight varieties found sprouts carried roughly 3.8 times more glucosinolates and 8.2 times more isothiocyanates than the mature root, alongside about 6.9 times more phenolic compounds (source). Interestingly, the same study found the opposite pattern for anthocyanins specifically: mature taproots of the red, pink and purple varieties tested carried more anthocyanin pigment than the young sprout stage, and the pigments in red and pink varieties were pelargonidin and delphinidin-dominant. That's a useful, honest nuance: Pink Radish at the microgreen stage is likely richer in glucosinolates and vitamin C than the mature root proportionally, even if its pink colouring hasn't fully developed the way it would in the mature taproot.

On anthocyanins specifically, the same honesty applies here as with China Rose Radish: a 2023 comparative study of five radish microgreen cultivars found anthocyanin content varies substantially from one variety to the next (full study here), and Pink Radish hasn't been individually tested the way Sango has.

General radish microgreen mineral data, not cultivar-specific, puts potassium around 233 mg, calcium around 25 mg, and phosphorus around 20 mg per 100 g, alongside roughly 14.8 mg vitamin C, figures compiled from USDA composition data for radish microgreens broadly.

Ratings above are qualitative rather than a single fixed figure, since this specific cultivar hasn't been individually studied to the degree Sango has, and several figures above apply to radish microgreens generally rather than Pink Radish by name.
