On polyphenols specifically: a 2020 peer-reviewed study from the University of Naples, published in Antioxidants, used UHPLC-Q-Orbitrap mass spectrometry to identify the dominant phenolic compounds in coriander microgreens. The two most abundant were chlorogenic acid and rutin (full study here). These are common across many leafy microgreens, but having them named and confirmed specifically in coriander microgreens by HPLC analysis gives us more to work with than a general "polyphenols present" claim.

Interestingly, (Z)-3-hexenal also drives the fresh "cut-grass" note found in freshly picked cilantro.

This isn't just interesting chemistry -- it explains why cooking, which converts these volatile aldehydes, noticeably softens the soapy perception in people who carry the OR6A2 variant. It doesn't eliminate it, but it reduces the aldehyde load enough that cooked coriander is more tolerable for many who can't stand it raw.
