What Is a Turnip Microgreen?

Turnip microgreens come from Brassica rapa subsp. rapa, the same species as Bok Choy, but a different subspecies entirely, bred over generations for a swollen edible root rather than a leafy top. At the microgreen stage, before any root has formed, it's the leaves that matter, small, tender and mildly peppery, gentler than mustard but with a similar family resemblance.

This is worth being precise about, since it changes which nutrient profile is actually relevant: a turnip microgreen approximates the leafy top of the plant, not the root, and the two parts are nutritionally quite different. Turnip greens are considerably more nutrient-dense than the root, especially for vitamin K, vitamin A, folate, calcium and lutein, while the root's standout nutrient is vitamin C. Judging a turnip microgreen against root-vegetable nutrition data would be comparing it to the wrong part of the plant.

The systematic review cited above, which pooled data from eighteen separate studies on turnip greens, identified gluconapin as the most common glucosinolate reported across the literature, followed by glucobrassicanapin, both aliphatic compounds distinct from mustard's sinigrin and broccoli's glucoraphanin. The review also catalogued a wide range of flavonoids and other phenolic compounds in turnip greens, mainly quercetin, kaempferol and isorhamnetin derivatives.

On vitamin C: we don't have a turnip-microgreen-specific figure, so we're citing the greens rather than the root. USDA data lists mature turnip greens at around 60 mg vitamin C per 100 g, and a peer-reviewed comparative study of collard, mustard and turnip greens found total ascorbic acid of roughly 133 mg per 100 g in younger leaves versus 109 mg per 100 g in older leaves (full study here), which at least points in the direction of younger tissue carrying more, consistent with the general microgreen pattern, even without a dedicated turnip-microgreen assay.

On vitamin K: again no turnip-microgreen figure exists directly. Mature turnip greens run around 251 micrograms per 100 g by USDA figures, and the same collard/mustard/turnip greens study found phylloquinone averaging 435 to 459 micrograms per 100 g across young and old leaves. The closest true microgreen data point comes from a related Brassica rapa subspecies rather than turnip itself: choy sum microgreens have been reported at 377 micrograms per 100 g fresh weight in a 2025 review. Since choy sum is a different subspecies from turnip, even though it's the same species, we're presenting this as a related reference point rather than a turnip-specific number.
